Love the idea of a fresh, colorful bowl but not so sure about raw fish? You are in good company. A cooked poké bowl gives you everything people love about poké, from the build-your-own freedom to the bright sauces and crunchy toppings, with proteins that are grilled, glazed or sautéed instead of served raw. At Kona Poké, about half of our protein lineup is cooked or plant-based, so friends who skip sushi can still find a bowl they will crave. Here are our favorite cooked poké options, plus a few tips for building your own at our Sanford, Apopka and Melbourne shops.

Our best cooked poké bowls, ready to order

Volcano Shrimp cooked poké bowl with boom boom sauce, cucumber and onion crisps

If you want a sure thing, start with one of our signature bowls. These are chef-built combinations that already work, and every one of them can be customized once you get to the counter.

Bourbon Chicken (415 cal). Grilled chicken tossed in a sweet, savory bourbon sauce and finished with green onion and sesame seeds. It is our go-to recommendation for first-timers and picky eaters, and it is the bowl most kids end up stealing bites of. If you are looking for chicken poké that feels familiar, this is it.

Honey Sriracha Chicken (525 cal). Grilled chicken thigh glazed in honey sriracha with mango, green onion and sesame seeds. Sweet first, then a gentle kick. The mango cools things down and makes this one feel especially tropical on a hot Florida afternoon.

Volcano Shrimp (470 cal). Shrimp coated in our signature boom boom sauce with cucumber, onion crisps and sesame seeds. It is creamy, a little spicy and loaded with crunch, which makes it a favorite with seafood fans who prefer their shrimp cooked.

Bird of Paradise (520 cal). Tofu with sweet heat sauce, edamame, sweet onion, cucumber, avocado, mango and sesame. It is a great pick for vegetarians and anyone who wants a lighter, plant-based protein with plenty of color.

How to build your own cooked poké bowl

Half the fun of poké is making it yours. Our build-your-own bowl starts with over 40 fresh ingredients, and plenty of them pair perfectly with cooked proteins. Choose a Mini Bowl (2 oz protein) for a lighter bite or a Regular Bowl (4 oz protein) for a full meal, then work through each layer.

Cooked poké options on our protein list

  • Grilled Chicken: simple, lean and ready for any sauce you like.
  • Bourbon Chicken and Honey Sriracha Chicken: pre-sauced and full of flavor.
  • Shrimp and Volcano Shrimp: cooked shrimp, plain or tossed in boom boom sauce.
  • Pulled Pork: tender, savory and great with pineapple or mango.
  • Surimi: a cooked crab-style seafood that is mild and slightly sweet.
  • Tofu: a plant-based protein that soaks up every sauce.

From there, pick a base like sushi rice, brown rice, cauliflower rice, lettuce or spinach. Add mix-ins such as edamame, cucumber, corn, pineapple, mango or sweet onions, then a premium topping like avocado, pineapple salsa or kimchi if you want to go all out. Finish with a sauce (garlic aioli, sweet heat, eel sauce and citrus ponzu all play nicely with chicken and pork) and your choice of garlic or onion crisps for crunch.

A couple of combinations our team loves: pulled pork over brown rice with pineapple, mango, green onion and sweet heat sauce; or grilled chicken over spinach with corn, cherry tomato, avocado and garlic aioli. You can see every base, sauce and topping on the full Kona Poké menu before you head in.

Cooked bowls are also a smart way to bring a mixed group together. If one person loves ahi and another only eats chicken, everyone can still order from the same place. That is a big reason a poké bowl bar for catering works so well for offices and family parties: guests choose their own proteins, cooked or raw. New to poké altogether? Our guide on what poké is and how it started covers the basics.

Poké for non fish eaters, close to home

Whether you are skipping raw fish for taste, for health reasons or just because, there is a cooked poké bowl with your name on it. Stop by Kona Poké in Sanford on W.P. Ball Boulevard, just a short drive from Lake Mary and Longwood, at our Apopka shop on East Semoran Boulevard, or at our Melbourne location on West New Haven Avenue, close to Palm Bay and West Melbourne. All three are open daily from 11am to 9pm for dine-in, takeout and delivery.

Not sure where to start? Tell our team you would like something cooked and they will happily walk you through it. And if you are already a raw fish fan, try a cooked bowl next time anyway. Bourbon chicken has converted more than a few loyal ahi regulars.
